Job Role Summary:

As Head Chef, you’ll be responsible for maintaining the highest culinary standards, managing all kitchen operations, and ensuring consistency in food quality, safety, and presentation. You’ll be a hands-on leader, passionate about food, a strong communicator, and someone who brings energy and creativity to the team.

Key Responsibilities:
- Lead, mentor, and develop the kitchen team to deliver high-quality meals within budget.
- Design and deliver varied, appealing menus suitable for a wide range of guests.
- Ensure consistent compliance with food safety, allergen, and HACCP guidelines.
- Maintain accurate stock levels through regular inventory checks and reporting.
- Monitor and record all food wastage and breakages, adhering to company procedures.
- Ensure completion and accuracy of all required food hygiene and safety documentation.
- Foster positive working relationships across all hotel departments.
- Maintain a clean, safe, and organised kitchen environment at all times.
- Proactively gather and respond to guest feedback to continually improve the food offering.
- Uphold Neilson’s brand values and contribute to a positive guest experience.
- Manage procurement, ensuring the quality of ingredients while staying within budget.
- Identify training needs and support development opportunities for your team.
- Collaborate with the Hotel Manager on operational planning, staffing, and guest service.
Qualifications & Experience Required:
- GCSE or equivalent education level
- Recognised catering qualification (e.g., NVQ/SVQ Level 2 or higher)
- Valid Food Hygiene Certificate and HACCP training
- Proven experience managing a kitchen team
- Experience in buffet-style and à la carte menu planning and execution
- Strong background in stock control, food cost management, and kitchen budgeting
- Competent IT skills (Excel, Word) for reports, menus, and inventory
- Previous experience in a hotel or high-volume catering environment
- Experience working overseas or in a ski resort (desirable)
